A Hüppe (plural: Hüppen) is a thin, sweet wafer, rolled and filled with a delicious choice of creamy centres. This speciality is produced according to a traditional recipe at our bakery in picturesque Gottlieben in the Lake Constance region of North Eastern Switzerland. Warning: one taste could change your eating habits for good!
Origins
According to historians, the term "Hüppe” comes from the Greek "hopyes”, meaning wafer. Therefore, Hüppen and wafer could both be of Homeric origin: a flattering thought indeed!
It’s not possible to confirm this theory, but we can be certain that this speciality has been baked in Switzerland for at least 400 years.
Its first appearance coincided with the growing use of sugar in the 16th century. The first Hüppen were rolled in convent kitchens, the culinary laboratories of the time, and the same mixture was used to bake flat wafers.
